The blend is 80% pinot noir, 20% côt. Immediately after having been harvested, the grapes are pressed slowly in order to extract all the aromatic power. Short contact time between the grape juice and the skin for the color. Fermentation occurs via indigenous yeast in cooled stainless steel tanks and then the wine is matured slowly on its fine lees until spring when bottled. The wine is fined (bentonite / vegan) and lightly filtered.
Sourced from vineyards near the river Cher, west of Sancerre. The vineyards are farmed in a sustainable fashion (Lutte raisonnée, grass cover, no herbicide / pesticide, pruning & green harvest to limit yields). The vines are trained double guyot, fruit is harvested by machine.

The 2023 Rosé is an uncomplicated, straightforward quaff. Light cherry fruit sits atop a very round, almost chubby, mouthfeel. It finishes chalky and slightly salty. This is unfussy and ready to drink. - Billy Norris
